

OUR STORY
Upon moving to Cambridge, we found ourselves living between scientific lab and our small vineyard in Poland, over a thousand kilometres apart. Missing all the joy of winemaking, we discovered a passion for distillation that led us to create unique Bison Grass Gin.
One day, somewhere in the sky, during our flight back from the vineyard, we had an idea to create spirits in Cambridge as well. And we even planted some Chardonnay vines here.
However, due to limited land, we soon shifted our passion also to gin. We mastered the art of distillation, and we experimented with dozens of botanicals at our home. And finally we just fell in love with the results from our bison grass which we brought from Poland.
We decided to blend the results with the classic English art of gin making.
Infusions with bison grass are known but we wanted to make something a bit different. We wanted to develop a crystal-clear, unique bison grass gin that captures and preserve the delicate and unique flavours and aromas of bison grass but without any infusions. And we managed to keep fresh complex aromas of bison grass, chamomile, green apples, vanilla and almond.
